Tomato Pudding

A simple, easy to cook addition to any meal

Ingredients:

loaf that is a day or two old, or Ryvita, can of chopped tomatoes, sliced mushrooms, celery, 4oz of cooking margarine or butter, pepper

Grease a shallow baking dish, tip in the chopped tomatoes, mix in the sliced mushrooms, chop and add the celery (or onion) crumble the bread or Ryvita (not too small) and sprinkle on top of the ingredients. Next, sprinkle or grind pepper on top, then add 3 small pieces of margarine or butter. Place on the top shelf of oven 180c for 20 minutes

 

Muesli for wheat sufferers

Ingredients:

Large packet of porridge oats (eg Flavahans), packets of: pumpkin seeds, dates, apricots, dried pineapple, mangoes, flaxseed.

Chop everything up small, in food blender if you wish, stir in well the porridge oats and put into one of those plastic bowls with a replaceable lid. One of those cereal storage tanks are ideal, they sell them in Tesco in Killarney. Give it all another really good shake and serve with milk.

You can add what you like, nuts if you like them.

   

Green Tomato Chutney

Ingredients

2lb green tomatoes, 2lb cooking apples, 1/2lb onions, 1 1/2 lb brown sugar, 1 lb saltanas (raisins... saltanas are nicer), 2 teaspoons each of: ground ginger, allspice and black peppercorns, 2 cloves of garlic, 2 tablespoons of salt and 1 1/2 pints of white vinegar wine

Peel and chop the apples and onions, put with chopped tomatoes, saltanas (raisins), sugar, spices, salt and garlic into large saucepan, moisten with a little vinegar, cook gently, adding the rest of the vinegar as the chutney boils down for about an hour. Towards the end stir constantly, when of a jam like consistency it is ready to be put into warmed jars. Makes about ten jars.

 

   

Spelt Yorkshire Pudding

3oz of spelt flour, i egg, some parsley, milk

grease a small baking tin and put it in the oven at 180c, mix the ingredients, adding in milk until the mixture is a thick creamy texture, not too runny. Put mixture into warmed baking tin, cook in upper part of oven for 20 minutes. Enjoy.
